This sourdough bread tutorial was completed over a few days. My process takes 4 days from soaking through sprouting to frying pancakes and baking bread. I will be posting step-by-step how I make my sourdough bread and sourdough pancakes. I begin on Thursday evening preparing the ingredients (hulled spelt berries – sprouted and the sourdough fed with whole spelt flour). Although it sounds like a time-consuming chore, it really is not. I will include an estimate of how long each task takes me so that you can see that fresh, homemade sourdough bread is easy to make. The challenge is being disciplined enough to follow through and not get overwhelmed. Take each step as it comes and it really is not too hard.
Day 1 (Evening)
Approximate Time Required: 5 minutes

Ingredients required:
2 cups hulled spelt berries
4 cups filtered water
Combine spelt berries and water; stir well.
Cover with a dishrag and secure with rubber band. Let sit undisturbed until next day (about 8-12 hours).
